Homemade Chewy Chocolate Chip Granola Bars



I have been experimenting with making granola bars lately, and this latest recipe has become a favorite.  The granola bars are chewy, sweet, and easy to make.  My boys love to have one (or two) as an after-school snack.

I love that these bars are so easy to make.  Simply mix all the ingredients together, put them in the baking pan, and pop them in the oven until done.  Honestly, the hardest part about making these delicious granola bars, is waiting for them to cool, so you can cut and enjoy them.

Chewy Chocolate Chip Granola Bars

These granola bars are chewy, sweet, full of chocolate chips, and easy to make.

Ingredients

  • 2 cups quick cooking oats
  • 1 cup crisp rice cereal
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup mini chocolate chips
  • 1/2 cup brown sugar
  • 1/2 tsp. salt
  • 1/2 cup butter, softened
  • 1/2 cup honey
  • 1 tsp. vanilla

Instructions

  1. Mix all ingredients together until well combined.
  2. Press into a 9 x 13 pan and bake at 350 for 20 minutes.
  3. Cool completely and cut into bars.

 *Note - I had a couple readers tell me they felt the granola bars were a little thin for their taste. We think this recipe results in the perfect thickness of granola bar for us, but if you like a thicker granola bar, simply adapt and put the granola bars in a 9X9 square pan, or whatever size pan will give you the thickness you desire. You may need to bake a few minutes longer, depending on the thickness of the bars.
