Time has been flying since my boys have been out of school and it is hard to find time to sneak away to write a post, but the other day I made some of our favorite chocolate chip muffins. This is a recipe well worth sharing.

Chocolate Chip Muffins
Adapted slightly from Betty Crocker's Cookbook Bridal Edition
3/4 cup milk
1/4 cup butter, melted
1 large egg
1 3/4 cup all purpose flour
1/2 cup semi-sweet chocolate chips
1/3 cup packed brown sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
Stir together milk, butter, egg, brown sugar, baking powder, salt, and vanilla. Then add flour and chocolate chips. Stir until just combined (batter will be lumpy). Divide batter evenly among twelve greased (bottom only) muffin cups. Bake 18-20 minutes until golden. Let pan stand 5 minutes, then remove muffins to wire rack. Serve warm, if desired.
